My husband and I have decided that in an effort to eat better, and feel better we are going to start eating following the Paleo way on September 1st. So I have been looking everywhere online to find paleo friendly recipes I can make for us. I came across this recipe on Pinterest and of course had to pin it to my new Paleo board.
Well, I decided after sending the husband to pick up the necessary ingredients I didn't have on hand (coconut flour, almond flour, raw honey...) that I would make it today.
It turned out really, really well.
I find it to be nutty, yet light and very flavorful and it's not at all dry, but in fact pretty moist! I am not a coconut person, and I don't taste it what-so-ever in this recipe. It is okay dry, but I'm going to try it with almond butter, or some kind of nut butter I think to see if I can even make it taste even better. I am usually a butter, peanut butter or gasp, a cheese whiz gal when it comes to my breads and toast.
I also made this bread in the wrong pan. I only have the normal bread pans, and it calls for the smaller 7.5x3.5 in pans! I also don't have a food processor and I left out an ingredient.. But, that's okay for testing purposes it turned out great!
/ / I left out the Flaxmeal and no food processor but it still turned out ~ oops.
Ingredients:
- 2 cups almond flour
- 3 tablespoons coconut flour
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 5 organic eggs
- 1 tablespoon coconut oil
- 2 tablespoons raw honey
- 1 tablespoon apple cider vinegar
Directions:
- Grease a normal loaf pan, or smaller 7.5 x 3.5-inch loaf pan.
- In a bowl add the almond flour, coconut flour, salt and the baking soda and mix until fully mixed together.
- Add in each egg, the coconut oil, raw honey and the apple cider vinegar. Continue to process until the ingredients are mixed very well.
- Place the batter into the loaf pan and bake at 350 degrees F for 30 minutes or until the center is cooked completely.
Not everyone is Paleo - so I'd love to know what is your favorite treat to make paleo or not?
I have a few friends who eat Paleo foods, so I will definitley share this with them. As for me - I will eat anything ;)
ReplyDeleteI had never even heard of eating Paleo till your post! I've googled it and seems very healthy and interesting! I will have to check it out more! Thanks for sharing!
ReplyDeleteI'm glad you mentioned that about the coconut because I"m not a coconut person either. I'll have to give this a try then!
ReplyDeleteI made a blueberry cobbler Monday night and took it to work (because while I love it, I don't want to eat the whole thing!) Unfortunately, one lady wasn't able to eat it because of an allergy. I'm hoping I can find more baked goods that ALL of us can enjoy!
ReplyDeleteI was just searching Pinterest last week for healthier bread alternatives & didn't even think to search for anything paleo (I did find a pretty simple Ezekiel recipe though). I'm definitely going to make this! But I'm not buying smaller bread pans for it, LOL.
ReplyDeleteCall me living under a rock but what is Paleo? The bread looks good and the ingredients healthy but I will need to find out what Paleo means.
ReplyDeleteI've never heard of coconut flour. Do you have to go to a specialty store for it?
ReplyDeleteI have been wanting to try baking with coconut flour. It's nice to be able to have a guilt-free treat!
ReplyDeleteyummy! I love cooking. I'm going to try this out. Thanks fro sharing this great recipe ^_^
ReplyDeleteI don't eat paleo, although I've thought of trying it. I guess one of our favorite treats are cookies.

ReplyDeleteI might try to make this for my daughter! I love finding recipes that are healthy and taste good.
ReplyDeleteHomemade bread is delicious no matter if it's paleo or not. I love whipping up a couple of loaves, smothering a slice in butter and digging in!
ReplyDeleteThanks for the recipe! We have been talking about going gluten free too.
ReplyDeleteI've been doing more paleo recipes lately and am loving them! I have all of these ingredients on hand. I should give it a try.

ReplyDeleteMy favorite treat is Greek yogurt flavored with sugar free koolaid and fresh berries mixed in.

ReplyDeleteThat doesn't look like bread, it looks like cake! I'll take that any day! We're not Paleo but we do take it into consideration and try some of the recipes. My favorite treat? Which day is it? It changes constantly! LOL
ReplyDeleteI love using almond flour, but have never used coconut flour. I'm thinking it would also taste great in macaroons!

ReplyDeleteI am new to the Paleo concept. But the bread recipe looks like something I could make it.
ReplyDeleteI love upside down pineapple cake in my house. I know it's not Paleo but that's just what I like. The fact that you use coconut is what makes it more moist. Several months ago I read something to suggest that coconut oil will help with memory. That's a huge issue in our house so I decided to try it out. While I can't say it's done anything for memory I have never baked more moist cakes! It's also great for sauteing vegetables. We use it all the time!
ReplyDeleteI like to make cupcakes the most, or cake pops. Your bread looks so moist and dense.
ReplyDeletehmm. we may have to give this a go. i love making breads!
ReplyDeleteI've actually never made my own bread and my mom used to bake every weekend. This does look rather delicious though!
ReplyDeleteNow this looks yummy! I have a friend who loves to make her own bread but I haven't tried before. I definitely should.

ReplyDeleteI love the whole idea of paleo, but I have to bake vegan. I wonder if I can sub the eggs with flax and still have it turn out edible?
ReplyDeleteLooks delicious, I'll have to make it one day.
